place Rice Krispies in a bowl
in a saucepan combine peanutbutter and semi-chocolate chips

in a bowl cream the sugars and butter
add in the egg and vanilla

in a greased cupcake pan place enough batter to cover the bottom (uses 10 places)

Cake Pops
Ingredients: cake mix (plus ingredients to make cake mix) icing, white chocolate, sticks, bags and ribbon
make the cake mix as directed on the box
cook till done then let cool completely
Then crumble the cake with your hands
add the icing (do a little bit at a time till you get the consistancy disired, the whole jar won't be used)
mix with hands, the consistancy should be; that you're able to form balls and have them keep their shape
form balls and place on a tray, place in a cold area (freezer or outside if its winter)
melt some white chocolate (add some crisco if desired) then dip part of the stick in the chocolate then place in the cake
melt some more chocolate then dip the cake balls into the chocolate and decorate. place bags on top and tie together with a ribbon if desired.

Ingredients: water, egg whites, light corn syrup, vanilla, and sugar
if wanted add in walnuts or peacans
make sure the nuts are finely chopped
in a bowl mix egg whites till soft peaks formed
in a saucepan with a candy thermometer stir in water, corn syrup and sugar
continue to stir till temperature is 248 degrees
after the temperature has reached the heat. remove form heat and let sit without stirring until temperature drops to 220 degrees. then while the mixer is running gradually add in the syrup to the egg whites
after a few minutes add in the vanilla
when mixture starts to dry (usually around 15 minutes) add in the nuts
mix till incorporated
make balls and place on wax paper

Stir in oats, vanilla, and corn syrup until well incorporated. pat down mixture into a jellyroll pan or a cookie sheet with high sides. bake for 10-15 minutes or until center in barely firm. While still warm sprinkle bars with bars with chocolate chips and small spoonfuls of peanutbutter. let sit for a few minutes. Then spread the chocolate and peanutbutter over the bars, swirling are you go to marbleize the two together. allow to cool then cut into bars.
Blackberry Whoopie Pies
For cake part:
Ingredients: Lemon Juice, milk, butter, baking powder, baking soda, salt, vanilla, egg, sugar, flourin a bowl combine flour, baking soda and baking powder and salt
in a separate bowl mix softened butter and sugar
mix until fluffy
add egg and vanilla, mix well.
mix together till smooth
combine lemon juice and milk (this will curdle the milk)
add milk to the mixture
mix in flour mixture
mix till well combined. let chill for 30 minutes
drop batter onto parchment paperplace in oven for about 10-15 minutes until golden
these do expand alot...
so I used a cutter to make the circles
Filling: vanilla, sugar, heavy cream, blackberries, lemon juicemix lemon juice, suagr, vanilla, and blackberries into a bowl.
use a fork to break up the berries
whip up heavy cream until firm
fold in berry mixture. let chill till use
Syrup: blackberries, water, sugarin a small saucepan place water and sugar over medium heat until sugar is dissolved, do not stir
Puree berries in a food processor
strain berries to remove the seeds. add sugar mixture to berries to help the juice move through easier
add in the last of the berries to the syrup.
to assemble place filling in between two cakes and top with syrup

1 3/4 cups of flour
1/2 teaspoon baking powder
1 1/2 teaspoon baking soda
1/4 teaspoon salt
9 tablespoons unsalted softened butter (1 stick plus 1 tablespoon)
1 cup sugar
1 egg
1 teaspoon vanilla
3 tablespoons milk
1 teaspoon lemon juice

preheat oven to 350 degress and line baking sheets with parchment paper
in a bowl combine flour, baking soda, baking powder and salt
mix together sugar and butter until light and fluffy. add egg and vanilla, mix well. In a measuring cup combine milk and lemon juice (this will curdle the milk) mix into sugar mixture. Add in flour mixture. Mix till well combined. Chill for 30 minutes.
Drop the batter onto the parchment paper. They WILL expand. If desired press a few blackberries into the batter. Cook until golden or firm to the touch. about 10-15 minutes.

1/2 teaspoon vanilla

1 3/4 cup heavy cream
Directions:
combine sugar, blackberries, vanilla, and lemon juice. use the back of a fork to break up the berries. let the mixture sit for 10 minutes.
mix the cream until it starts to thicken, fold in the berry mixture. use on the same day as making.
Syrup:
1/4 cup sugar
3 tablespoons of water
3 cups of blackberries
Directions:
Place sugar and water into a sauce pan and heat until sugar is dissolved without stirring. Puree half the berries and add the sugar mixture. strain the mixture to remove the seeds. Add the remaining berries to the mix and chill until ready to use. use on the same day as making.
Chocolate Bottomed Meringues
mix egg whites until foamy
then add cream tartar, then beat until fluffy
add caster sugar, (to make caster sugar place granulated sugar into a food processer)
mix sugar into the egg whites then add the vanilla. Mix until still peaks form
pipe meringue on parchment paper, making hershey kiss shapes.
cook the meringues in an undisturbed oven for an hour.
melt chocolate and add crisco if wanted for a smoother texture
once meringues are dried out take out of oven
dip each meringue into chocolate.
Recipes:
4 egg whites
1 teaspoon of cream of tartar
1 cup plus 2 tablespoons of caster sugar
1 teaspoon of vanilla
1 1/2 cups of semi-sweet chocolate morsels (add more if needed)
Directions:
Preheat oven to 225 degrees and line baking sheets with parchment paper
in a bowl beat egg whites until foamy then add cream of tartar, beat until fluffy. Add sugar gradually, once sugar has been added add vanilla. Beat until still stiff peaks form.
Place meringue into a bag and pipe meringues in a hershey kiss shape. Place in the oven and cook for 1 hour undisturbed. Then turn off heat and let meringues sit in the oven for a fews hours or until really dry.
melt chocolate, add crisco if desired. dip the bottom portion of the meringue into the chocolate. allow to sit at room temperature. Do not refrigerate.
Chocolate Rasberry Mints
The ingredients needed are: semi-sweet chocolate morsels, rasberry extract (or peppermint works too), cream cheese, and powdered sugar
combine the softened cream cheese and powdered sugar
mix the cheese and sugar until well combined
add in the extract
combine together
roll out the mixture into balls onto wax or parchment paper
indent each ball with either your finger or a 1/4 teaspoon. let balls chill
melt the chocolate, to make chocolate smoother add a small amount of crisco
place chocolate into a bag and pipe into indentation. chill mints. until served.
Recipe:
1 lb. powdered sugar (about 3 3/4 cups)
4 oz. cream cheese softened
1/4 teaspoon of rasberry extract ( or peppermint extract)
6 oz. semi- sweet chocolate mosels
Directions:
Combine powdered sugar and cream cheese. mix until well combined. Then add extract, combine. Form balls of the mixture onto parchment or wax paper. Make an indentation into the balls using your finger or 1/4 teaspoon. let balls chill. Melt chocolate (add crisco, about 1/2 teaspoon, for smoother chocolate) Place chocolate in a bag and pipe chocolate into the indentation in the mints. Chill until serving.
Peanutbutter Chews
place the sugar and light corn syrup in a medium sauce pan
allow sugar to boil for one minute stirring constantly, remove form heat
add peanutbutter and corn flakes to the mixture, stir until incorporated
drop by spoonfuls onto the wax paper.
can be enjoyed later or right away.
1 cup sugar
1 cup light corn syrup
12 oz. of peanutbutter (a little more than 1 cup)
6 cups corn flakes
Directions:
In a large saucepan, bring the sugar and light corn syrup to a boil. Boil for one minute stirring constantly. Remove form heat and add peanutbutter and corn flakes. Stir ontil everything is well coated. Drop the mixture by spoonfuls onto the wax paper.
